Finca Turrialba, owned by Macario Alejandrino Medina Galo, is located in Los Planes Region, Municipality of Dipilto, Nueva Segovia, at a height of 1,100 meters above sea level; an estate inherited by his father that dates back to 1956, when they cultivated Arabic coffee.
The tradition of cultivating this crop has always been the sustenance of the family; however, over the years, new varieties have been planted and this caused changes. The farm consists of 5 manzanas (3.53 hectares) of coffee the varieties Caturra and Parainema, and 13 manzanas (9.17 hectares) of pine forest and shrubbery.
The techniques used for wet processing have not changed much over time.
Coffee is cut once is ripe, allowing a good quality in the cup. Pulping is done on the same day of cutting and drying. Fermentation is done 36 hours later, due to the temperature.
The drying process is done on a concrete platform or in boxes. Imperfect or defective grains are discarded.
Finca Turrialba represents Macario Medina’s a legacy for his family to follow the tradition of growing coffee.
