| History Mr. Calix was born in
southern Honduras, in the municipality of Alianza, department of Valle.
in 1972 he moved to the city of Comayagua where he graduated from high
school in 1978, right after he joined the Agriculture School of
Catacamas from where he got his degree on Agriculture in 1981. In 1982
he started planting Coffee and has been an active Coffee producer since
then.
Quality Practices
The coffee is processed by using traditional methods,
he owns a pulping machine and dry the grain by using the sunlight. No
chemical pesticides or fertilizers are used due to the farm is located
in the Sierra de Agalta National Park.
Environmental Care
This Coffee is shade grown and is under organic
management which comply with the Law of the Sierra de Agalta National
Park.
Fertilization
Bio-fertilizers produced in the same farm by using
the Californian earthworm (Eisenia foetida) and coffee pulp are the only
ones used. Prunes for sanitary purposes is the most practiced.

Harvesting
Handpicking of ripe grains of Coffee begins in January and finish in
April. This task is performed by skillful men and woman.
Pulping and Fermentation
Mr. Calix has a small infrastructure for wet milling. there are two
fermentation tanks, an a pulping machine. ping machine and fermentation tanks with
classification canals for best separation of coffee types.
Drying
The drying of Coffee is done on mesh grill infrastructure in his
farm.
